Aubergine rolls with cheese

  • 100 g "Mezan"cheese
  • 2 small aubergines
  • ½ cup any nuts
  • Mayonnaise
  • Garlic
  • Coriander or parsley
  • Salt
  • Pepper
  • Vegetable oil
Cut aubergines lengthways in thin stripes, and fry them on both sides. Filling: grate nuts and cheese on a grater with small-sized holes. Chop parsley or coriander, add mayonnaise, salt and pepper. The filling will be rather dense. Spread the filling with the spoon over aubergine slices and roll them.
